The first ranking is automatically created when you create a Club/Organization, but if you want you can create more than one ranking associated with your Club/Organization. For example, you can create a specific junior ranking. The age group is by default inside of each ranking, but if you want only junior ranking on its own ranking page, you can create an own ranking for juniors.
